  • Sugar, granulated5,7 kg
  • Egg, white4,8 kg
  • White wine vinegar90 g

Instructions

  • Step 1
    Place whipping and bottom scraper tool on mixing kettle.
  • Step 2
    Add egg whites and sugar on mixing kettle and warm up Core 60°C, mix forward 60, 5 min
  • Step 3
    Warm up Core 78°C, mix forward 60, 5 min or until mixture reach 60°C
  • Step 4
    Turn heating of and start whipping speed 140, 5min or meringue is fluffy and stiff
  • Chefs tip: Remember to wash the mixing kettle well before starting to make the meringue so that there are no fat residues in the pot.
