Ingredients for 20 kg

  • Sugar, granulated5,2 kg
  • Egg, whole7,8 kg
  • Cake flour (wheat flour)5 kg
  • Baking powder 90 g
  • Oil (rapeseed, sunflower etc)1,6 L
  • Milk0,8 L

Instructions

  • Step 1
    Place whipping and bottom scraper tool on mixing kettle.
  • Step 2
    Add eggs and sugar on mixing kettle and warm up Core 40°C, mix forward 60, 5 min or until mixture is 35°C.
  • Step 3
    Set mixing forward and mix speed 140, mix until stiff and fluffy.
  • Step 4
    Change tools bottom and folding tools.
  • Step 5
    Mix forward speed 60 and add flour, milk and oil in the mixture. Mix until smooth.
