Bloom the gelatin and let it sit for 5 minutes

Place Dieta Mixing Tool in the mixing kettle

Add water, sugar, and glucose syrup to the kettle.

Cool the syrup to 80°C and add the bloomed gelatin.

Ingredients for 10 kg

  • Gelatin Powder 0,250 kg
  • Hot water1,0 kg
  • Granulated sugar3,5 kg
  • Glucose syrup4,125 kg
  • Water1,25 kg
  • Powdered sugar (for dusting)

Instructions

  • Step 1
    Place the standard mixing tool in the mixing kettle.
  • Step 2
    Add water, granulated sugar, and glucose syrup to the mixing kettle. Heat to Core 125°C, mix forward 20, for 30 min min or until the sugar syrup reaches 116°C.
  • Step 3
    Cool the syrup to Core 80°C, mix forward 60, and add the bloomed gelatin. Continue mixing until the gelatin is fully dissolved.
  • Step 4
    Increase mixing speed to 120-160, forward only, and whip until the marshmallow is light and fluffy.
  • Chefs tip: For extra flavor, try adding rose water, aromatic oils, or natural extracts to customize your marshmallows!
