  • Wheat Flour 5+5 kg
  • Water5 liters
  • Yeast0,5 kg
  • Sugar0,4 kg
  • Salt0,2 kg
  • Butter1 kg
  • Eggs1 kg (approximately 20pcs)
  • Milk2 liters

Instructions

Step 1: Prepare the Yeast Mixture:

  • Add the sugar with the water and mix until the sugar dissolves.
  • Mix the yeast and let it sit for about 10 minutes until it becomes frothy.
  • Step 2: Mixing the Dough

    • Add the yeast mixture in the kettle, add half the flour, salt, softened butter, eggs, and milk.
    • Start mixing at a lower speed to combine the ingredients. Gradually increase the speed to medium as you add the rest of the Flour.
    • Keep mixing the dough until it becomes smooth and elastic, which should take about 10-15 minutes. The dough should pull away from the sides of the kettle and be slightly tacky but not overly sticky.
    • Step 3: (First) Rise

      • Once the dough is well-kneaded keep the kettle lid closed. Allow the dough to rise until it has doubled in size. This usually takes about 1-1.5 hours.
